Late Night Queso Dip

Late Night Queso
I made pork chops and fried rice for dinner the other night. The bag of pork chops I thawed, only had 4 super skinny pork chops in them. My daughter LOVES them. So I already knew I was going to be sacrificing some of mine for her. But instead of sharing some, she ate the entire thing. So I just ate my fried rice and decided I would eat a snack after the kids went to bed. 

I look forward to bedtime for the kids more often than not these days. My kids are fighting like cats and dogs. My son has learned that he can fight back against his sister when he doesn't want to do what she wants. This results in lots of tattling and crying. This is one phase that I can't wait to pass!!! So when they go to bed, I enjoy sitting on the couch and watching some TV with the hubby. Or maybe writing on my blog! Or just going on a Pinterest hunt. Tonight I was looking forward to eating a snack and not having to share it with anyone. Well maybe my hubby can have some. Maybe.

I really had planned on eating something healthy. Maybe an apple and peanut butter. Or a small salad. But when I opened the pantry to get the peanut butter, I saw the bag of chips and decided I wanted some chips and dip!!

I have a really good queso dip I've been making for over a year now that we all love! I will share it next time I make it. But I didn't want to chop up peppers, onions, jalapenos, tomatoes, and cilantro just for one quick little snack. So I grabbed a bunch of stuff and just kind of threw it together.


So I grabbed some spices and jalapeno jelly that my neighbor had given me earlier. She came over so we could make laundry detergent!


Then I melted about 2 oz of american cheese and 2 oz of monterey cheese and melted them in the microwave. Then I added enough half and half to make it creamy. I want to say it was about 2-3 tbsp.


 Then I added a handful of shredded cheddar cheese.


    Then came the spices. Then I seasoned more as needed to taste.

Late Night Queso

1-2 Servings

Ingredients
2 oz American cheese
2 oz Monterey cheese
2-3 tbsp of Half and Half
1/8-1/4 cup of shredded cheddar cheese
1/8 tsp salt
1/8 tsp of pepper
1/8 tsp garlic powder
1/8 tsp of onion powder
1/4 tsp of chives
1/8 tsp of cumin
1 tsp of jalapeno jelly * you could substitute red pepper flakes to give it some spice if you don't have any jelly

Microwave the cheese in a glass dish for 1 minute. Stir and put back in for 30 seconds. Repeat for 20 seconds at a time until smooth and melted. Stir in the half and half as needed until it has the creamy consistency you desire. Add cheddar cheese, stir until melted. Add the spices. Taste, and season more as needed. Serve with chips and enjoy!
