It's been a busy weekend for us! My husband has a 4 day weekend so we've been enjoying the nice weather! I'm glad the snow has decided not to come yet. It's still coming, since snow in Alaska in the winter is inevitable, but it's nice to enjoy fall for a bit longer.
But now that it's Sunday, we will be inside watching football! I hadn't really planned any meals since we just kind of snack while watching the games. My daughter requested artichokes, while my son wants PB&J, and my husband wants chips and dip. So I decided to just make son vidalia onion dip for myself! I made spinach artichoke dip on Friday, but completely forgot to take pictures (and write my blog, oops). So I'll get around to posting that recipe soon!
This dip always reminds me of my dad's house and his many fall parties that he has. It's a regular contribution from my stepmom. She's not the best cook, but she really tries! I love onions, and cheese, so this dip just kind of melts in your mouth! And it's super easy to make! You just mix it and bake it! I've tried grating/shredding the onion so I don't get all teary eyed while chopping, but it just changes the consistency too much. So I just stick to dicing them. I've tried all the tricks: candles, cracker in the mouth, tissues in the nose, holding your breath, and short of a gas mask, nothing works! I will say though that cutting a cold onion usually makes my eyes water and burn less.
Anyways, here is the recipe! It's great with chips, crackers, bread, veggie sticks, basically anything!
Vidalia Onion Dip
1 cup of shredded swiss cheese
1 cup of diced vidalia onion
1 cup of mayonnaise
Salt and Pepper (optional)
Mix all the ingredients together and place in a buttered dish. Bake at 375 for 15 minutes. Then turn the broiler on high and let cook for another minute or so. Keep an eye on it! It can turn brown fast. Remove and serve with chips, crackers, or bread!
